I love hot and creamy dips.  This recipe for Hot Shrimp and Artichoke Dip is simple, amazing, and very easy to make.  It’s a variation on my slow cooker spinach artichoke dip, but it ‘s made in the oven.  Of course, it’s winter, so I don’t mind turning on the oven,  In the summer I might have a different opinion.

Serves: 3 cups
Creamy and delicious, this artichoke dip is a definite crowd pleaser. Cook's Note: If you don't want to turn on the oven, and you have a slow cooker, mix all of the ingredients together and put it in a quart sized slow cooker and cook on low for 2½ to 3 hours until dip is warm and bubbly. Total cost of recipe as written below is $5.29.  You can substitute 2 drained (4 ounce) cans of medium shrimp in place of the salad shrimp.
  • 1 (14 ounce) can artichoke hearts, drained and chopped ($1.49)
  • 1 cup small salad shrimp ($1.50)
  • 2 cloves garlic, finely minced ($0.04)
  • 1 cup mayonnaise ($1.00)
  • 1 cup grated parmesan cheese ($1.26)
  1. Preheat oven to 350 degrees.
  2. Place all ingredients into a 1 quart baking dish.
  3. Stir until well combined then smooth surface.
  4. Place in 350 degree oven.
  5. Bake for 25 to 30 minutes until warm and bubbly.
  6. Serve with crackers, pita chips, or tortilla chips.
