One of the best things about this slow cooker spinach artichoke dip recipe is that it only has 5 ingredients. There’s a minimum of chopping. All of the ingredients can be poured into a small slow cooker, stirred, and allowed to cook for about 3 hours. I used a very small dip sized cooker that was included with a larger one that I received as a gift. It has only one temperature which I believe is equivalent to low. I stirred it a couple of times during cooking, but otherwise, I was free to make other foods to go on our buffet. The dip cooked itself.

- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1 (10 ounce) package frozen chopped spinach, thawed, drained, and squeezed dry.
- 2 cloves finely minced garlic
- 1 cup mayonnaise
- 1 cup grated Parmesan cheese
- Place all ingredients into the ceramic crock of a small 1 quart slow cooker.
- Mix to combine.
- Turn cooker to low.
- Allow to cook for 2½ to 3 hours or until bubbly.
- Serve with a side of tortilla chips and a bowl of salsa, or with pita chips or crackers.
