Cauliflower Ceviche

Cauliflower Ceviche (Vegan)

Cauliflower Ceviche was inspired by the green grocer who comes to my work.  I was telling him that I was eating vegan for a month, and he asked if I had ever made ceviche with cauliflower.  Of course, I was intrigued by the idea, and asked him for details.  All of the suggested ingredients were vegetables that I really enjoyed, so I decided to give Cauliflower Ceviche a try. The final result wasn’t like traditional ceviche, or even my cheater’s ceviche,  but Cauliflower Ceviche was delicious in it’s own right.  Baker’s Man, however, claimed “This is not ceviche.  Where’s the […]

Vegan garlic and herb butter

Vegan Garlic and Herb Butter

Vegan Garlic and Herb Butter was a necessity.  We love garlic, and we couldn’t enjoy pasta dishes or certain soups without a piece of garlic bread.  Technically, we could have eaten them, but we really like having garlic bread with our pasta dishes.  I mentioned in my previous post about vegan butter that once I had mastered vegan butter, it would be possible to make a compound garlic and herb butter that I could then use to make the garlic bread that all of us here at Patty Cake’s Pantry love. I had linked to my garlic Parmesan butter recipe, […]

Cinnamon "Honey Butter" (Vegan)

Cinnamon “Honey Butter” (Vegan)

Cinnamon “Honey Butter” was another necessity to ensure that our 30 days of vegan were tolerable.  Sometimes, you just want some sweet honey butter to put on your cornbread or biscuits.  The problem is that honey is an animal product, butter is, too.  Once again, I was forced to come up with a solution to this problem.  Fortunately, I’m becoming more skilled at creating vegan alternatives as the “vegan experiment,” as Baker’s Man calls it,  progresses.  This Cinnamon “Honey Butter” is a great addition to our vegan condiments, and it makes some delicious cinnamon toast in the morning. To make […]

Sheet Pan Fajita Potatoes

Sheet Pan Fajita Potatoes

Fajita potatoes weren’t something I intended to make, but in a moment of desperation as I tried to figure out what to make for our vegan dinner, I realized I had everything it took to make fajitas.   Instead of using meat, I would use russet potatoes, and since I’m in love with sheet pan dinners, I decided to make my potato fajitas in the oven. This recipe was inspired by two recipes that I recently read.  One was for sweet potato fajitas and the other was for oven baked easy chicken fajitas.    I didn’t have any sweet potatoes, and we […]

hummus sandwich

Hummus Sandwich

The hummus sandwich is another vegan sandwich idea that’s come to the rescue on more than one occasion  while I was packing lunch.  I still find my self wanting to reach for cold cuts and cheese when it’s time to make lunch.  The only problem is that there aren’t any of them lying around.  Before beginning my 30 days of vegan challenge, I decided that aside from a few meat substitutes to have with dinner, and some vegan tuna, I didn’t want to purchase any of the vegan “coldcuts” that are available in most markets.  I also didn’t want to […]

Vegan steak and potato foil pouches

Vegan Steak and Potato Foil Pouches

Vegan Steak and Potato Foil Pouches is not a typo, though it is a strange name for a recipe post.    This all began when Bus Boy asked me if I could make garlic steak and potato foil packs for dinner.  I told him they weren’t vegan, and he politely asked me if I could please, Please, PLEASE, make them vegan.  How could I refuse my firstborn?  I had to make them vegan for him.  How hard could it be?   Aside from the steak, this recipe was already vegan.  I just had to find a steak substitute.  It took a couple of […]

Asian "Tuna" Salad (VEGAN)

Asian “Tuna” Salad (Vegan)

Asian “Tuna” Salad doesn’t sound like a vegan recipe, but  it is.  The “fishless” tuna that I used for this recipe was Loma Linda Sesame Ginger Fishless Tuna.  I purchased this product as part of my pre-vegan shopping trip.  I wanted to make sure my pantry contained some simple ingredients that I could use to put together simple meals on nights when life is crazy.  Anyone who regularly visits my site knows that I love to make salads in mason jars for lunch.    Since I’m eating vegan this month, it seemed like a logical choice for an Asian inspired salad.

vegan butter

Vegan Butter

It’s day three of my 30 days of vegan, and I’m reporting my third food related crisis.   I really hope this becomes easier as the month progresses.  My problem was that I needed butter.   I had planned to make a simple and delicious tomato sauce to serve over pasta, but my family expects garlic bread with all pasta dishes.  To make garlic bread, I need butter.  Butter isn’t vegan.  Do you see my problem?  I researched “vegan butter” on the internet and discovered that everyone’s favorite “vegan butter” seems to be Earth Balance, so when I had to take […]

Vegan Recipes for Easter

Vegan Recipes for Easter

Today is the first day of my 30 days of vegan series.  It’s also Easter Sunday.  I realize that it’s also April Fool’s Day, but it’s no April Fool’s joke that Patty Cake’s Pantry will be vegan for the next 30 days.  I hadn’t really thought about Easter when I agreed to spend the next 30 days blogging about Vegan recipes.  Our traditional Easter fare includes a ham, mashed potatoes or augratin potatoes, macaroni and cheese, sweet potatoes, and green bean casserole.   None of these recipes are vegan.  That was a problem.   My family was not happy.  The decision to […]

Benita Gibbs of At Meme's Table

Interview with Benita Gibbs from “At Meme’s Table”

As part of our preparation for the 30 days of vegan series, we are trying to learn as much as we can about a vegan diet in order to ensure a successful month.  Today, we are sharing an interview with Benita Gibbs of “At Meme’s Table.”  Benita and her husband, Tony, were the first people that Baker’s Man and I met when we attended The Everything Food Conference last year (#EFC2017).  They were volunteers at the event, and we immediately hit it off.  When I  realized that I needed to talk to someone who could give me advice about how […]
