Southwestern Couscous Salad was born out the the necessity to create a vegan salad to take to work for lunch. I realize that traditional southwestern cuisine doesn’t contain couscous, but I made use of what I had on hand. I had wanted to make a more traditional couscous salad that contained garbanzo beans, and a lemon dressing, but the only recipe that I knew contained feta cheese which is definitely not a vegan food option. I considered what I could use as a vegan substitute for the cheese, but I couldn’t find anything in the house that would be an […]
Sloppy Joes are a family favorite around here, so I couldn’t let a month of vegan meals pass without creating a vegan version of my homemade Sloppy Joe recipe. The funny thing about Sloppy Joes is that even most of the canned sauces are already vegan, so technically, this could be a two ingredient recipe, but since we’re trying to challenge ourselves this month, I decided that we would make our own sauce.
Vegan Steak Chili is another one of those improbable vegan recipes, yet here we are in the midst of our 30 day of vegan, and I’m writing this recipe. I love chili, and today was a very cold day. The weather can’t seem to make up its mind around here. Chili is one of the hearty soup type recipes that my family can agree on, so we decided to make a vegan chili, and because we had the meat substitute, we made a vegan chili with “steak” pieces.
Vegan Salads seem like a no brainer, right? Unfortunately, many salads feature cheese, mayonnaise, dressings, or other ingredients that aren’t friendly for those on a vegan diet. As I was making a taco salad for my lunch this week and switching out ingredients to make this recipe vegan friendly, I wondered how many of the salads on my site were already vegan. Here’s a list of vegan salads that were already on the Patty Cake’s Pantry website. As is my usual practice, these vegan salads are listed in the order in which they were published. Salads Lemony Celery Salad This […]
A recipe for vegan banana bread was a necessity. You know that I hate when any food goes to waste, and I love to make banana bread, right? I find it extremely satisfying to turn browning bananas into something my family will eat instead of tossing them into the trash. My favorite way to make banana bread is with my 1-2-3 method. I wondered if it would be possible to create a vegan banana bread using the same technique replacing the egg with something that’s vegan friendly, so I began to search the internet for vegan friendly egg substitutes.
Vegan side dishes may sound obvious, but many vegetable side dishes contain butter, milk, or other additions that make them not so friendly for those trying to adhere to a vegan diet. I searched the Patty Cake’s Pantry website and collected all of my vegan side dishes. This collection, along with my vegan entrees, and vegan soups helped me to more fully realize that I already had a repertoire of vegan recipes I could draw upon to help get me through my 30 days of vegan.
These four vegan soups are not new to Patty Cake’s Pantry. Just as I did for the Vegan Entrees, I looked through my site to see if there were any vegan soups already in my culinary arsenal. Until this month, I never set out with the intention of writing a vegan recipe, but as I reviewed my recipes, I found that I had accidentally created four soup recipes that were vegan. I was very happy to make this discovery. Soups make a great, and filling lunch. They can be packed in thermoses and sent to school, or they can be […]
As I began this month of vegan, I was racking my brain and trying to decide what I could make for my family to eat for dinner. I remembered what Benita had said during her interview about many recipes being “accidentally vegan.” This made me wonder what vegan recipes were already published on Patty Cake’s Pantry, and which ones could become vegan with minimal modification. Each of the following vegan entrees had already been published on Patty Cake’s Pantry prior to us beginning our 30 days of vegan challenge. I was surprised to discover that there were already eight vegan […]
An avocado sandwich is a unique and tasty vegan lunch option. Preparing a sack lunch when there are no leftovers can present a bit of a problem for someone new to a vegan diet. On day one, I needed lunch, but I didn’t have any vegan leftovers from dinner the night before because that meal hadn’t been vegan. I was perplexed about what I could use to create a delicious sandwich. There was always the possiblity of peanut butter with jam, but that seemed a bit too easy. I wanted to challenge myself to try something new. I looked into […]
I’ve barely begun my vegan journey, and I’m already having a problem. This wasn’t a problem yesterday when I gorged myself on fresh strawberries and banana slices for breakfast, but today was a different story. My go to breakfast on most weekdays is a bagel slathered with cream cheese, and/or topped with smoked salmon. Neither of these options is available to me as a vegan, so I asked myself “What do vegans eat for breakfast?” Obviously, fruits and vegetables are a possibility, but other options can be more complicated than they seem. What follows is a list of our favorite, […]
