Italian style poached eggs bring an unusual twist to your usual spaghetti dinner. There’s something amazingly delicious about soft poached eggs slathered in a rich marinara. The eggs can be served alone with a piece of crusty bread, or can be served atop spaghetti. However you serve these Italian style poached eggs, this recipe is a winner.This is another recipe from my octogenarian friend who’s a little Italian grandmother. Our visits usually include some discussion of food, and she is a tremendous resource for frugal, family friendly meals. During a visit, she was sharing with me one of the ways she stretched her grocery money while her children were younger, and she told me about these eggs. I confess that I was not overly enthusiastic about the idea, so it took me quite a while before I finally made them.
Making these poached eggs is easy.Bring marinara sauce to a boil, and make wells in the sauce. You can use either homemade or your favorite store bought marinara sauce. Break the eggs into the boiling sauce, covered the pan, and allow them to cook.
Once the eggs are cooked, they are ready to serve. I chose to serve the poached eggs atop spaghetti, sprinkled with shredded Parmesan cheese. My family was skeptical, but the result was delicious.
This is so easy that I feel silly writing a recipe, but here it is.

- 3 cups marinara sauce
- 6 eggs
- Grated or Shredded Parmesan (about 1 tablespoon per egg, or to taste)
- Heat marinara sauce on stove to the boiling point.
- Make six wells in the marinara with the back of a spoon.
- Break eggs into the marinara sauce
- Cover pan with a lid and allow to cook for 2 to 4 minutes or until eggs are cooked to your desired consistency.
- Serve with crusty bread or atop spaghetti and sprinkle with shredded or grated cheese
