There’s something absolutely delicious about the combination of sweet and salty. That tantalizing taste is the reason we put sea salt on our caramel, and it’s the reason why the combination of salty prosciutto, or even deli ham, goes so well with sweet cantaloupe.
I realize that I just wrote a post about Autumn and chilly weather, and eating soup, but it’s hot again, so I don’t want to turn on my stove or oven. Today, I wanted to post about a simple two ingredient lunch that’s delicious. It’s similar in simplicity to the cantaloupe and cottage cheese salad. It’s very easy
First, you will need to cut a cantaloupe in half and remove all of the seeds. Then, cut the melon into wedges. I recommend cutting the melon into about 16 wedges. If the melon is large, you may be able to get more. If the melon is small, you may only be able to get about eight wedges. Use your own good judgement here.
Once your melon is cut, and peeled, wrap slices of prosciutto, or thin sliced deli ham, around each wedge of melon. That’s all there is to it. If you don’t want to peel the melon, simply fold the meat and drape it over the top of the melon wedge instead.
These are great to serve at a brunch or pack in your lunch. A serving is 4 wedges (one fourth of a melon).
If you’ve never tried prosciutto wrapped melon before, you really need to try it.

- Wrap a slice of prosciutto around each peeled wedge of melon.
