Cran-Raspberry Gelatin Salad is a variation on our Lemon Gelatin Fruit Salad. I chose not to refer to this variation as a fruit salad because, frankly, there wasn’t a lot of fruit in this combination. The whole berry cranberries just seem to disappear among the cottage cheese, and while this still has some texture, it wasn’t enough to call it a fruit salad. Gumdrop Cake is usually a Christmas tradition in certain cultures, so why am I making one in February? Don’t you know that today is National Gumdrop Day? I already had some gumdrops, and having been inspired by this post for a Christmas Gumdrop Bundt Cake, I decided that I would celebrate today by making a Gumdrop cake. I, however, lacked the ambition to create a cake from scratch, so I used a cake mix. (Gasp!)
