Baked Ravioli Casserole

Baked Ravioli Casserole

Baked Ravioli Casserole is simple to assemble and gets dinner into the oven, and onto the table, without much fuss.    The dish contains only 3 ingredients,  but tastes like you worked much harder at getting it onto the table.  Like my sheet pan dinners, once this dish is assembled, it goes into the oven where it bakes for about 45 minutes.  That allows you to help the kids with homework, or tend to whatever needs your attention, while dinner takes care of itself.

Burrito Pie

Burrito Pie

What do you do if there are only three tortillas, and you’re supposed to make burritos for dinner for a family?  Do you run to the store?  Absolutely not.  When we run to the store for one item, we end up buying extras, and that can hurt your grocery budget.  Instead, you whip up a simple and delicious Burrito Pie.  This recipe is a creative and tasty way to serve a family of five a filling meal with only three burrito sized tortillas.    Burrito Pie is a winning weeknight dinner.

Sum Gum

Sum Gum

Sum Gum is a simple and delicious combination of ground beef, green beans, rice, and Asian inspired seasonings, and it’s a perfect simple supper.    The best part is that it can all be prepared in one skillet, as long as you have some leftover rice in the refrigerator.  I love meals that don’t make a big mess, and they’re a real winner when my family likes it.   This recipe definitely fit the bill.

Creamy Chicken Enchiladas

Creamy Chicken Enchiladas

These chicken enchiladas are easy to make because they start with canned chicken, but don’t let that humble beginning fool you.  These are delicious, creamy, and certain to become a family favorite.  In fact, my family requests this version more often than they request regular chicken enchiladas.

Berta's Tuna Casserole

Berta’s Tuna Casserole

Berta’s Tuna casserole is made with simple ingredients that are assembled and baked.  This recipe is courtesy of my ninety year old friend, Berta.  She promised me that it had always been a favorite of her family, but I admit to being skeptical about her recommendation.  Prior to making this recipe, I had never eaten a tuna casserole.  As it turns out, my skepticism was unwarranted.  My family loved this.  Even Sue Chef deemed it “good” and had a second helping.

Green Chili Enchi-sagna

Green Chili Enchi-sagna

What do you do get when you arrange your tortillas, filling, and green enchilada sauce  in layers instead of rolling them up?  It’s something that I call delicious.  We also call it Enchi-sagna.  Enchi-sagna is Patty Cake’s short hand for Enchilada Lasagna.  The best reason for making our Green Chili Enchi-sagna  this way is that it takes much less time that rolling enchiladas and placing them into a pan.  That helps get dinner on the table faster on those busy evenings, and since you don’t have to roll them up, it doesn’t matter if your tortillas are a little bit […]

Baked Spaghetti and Meatballs

Baked Spaghetti and Meatballs

Baked Spaghetti and Meatballs is a great casserole for an easy dinner.  The thing I like best about this is that it can be made ahead, stored in the freezer, and popped in the oven when you need an easy meal.  It’s filling, delicious, and kid friendly.

Creamy and Delicious Italian Sausage and Rice Casserole

Italian Sausage and Rice Casserole

This Italian Sausage and Rice Casserole is a simple and delicious combination of sausage, vegetables, rice, and creamed soup that’s very satisfying and filling.  It’s also an inexpensive recipe that will feed the whole family.    Even Food Critic liked this one, and he’s notoriously hard to please.
