A recipe for vegan banana bread was a necessity.  You know that I hate when any food goes to waste, and I love to make banana bread, right? I find it extremely satisfying to turn browning bananas into something my family will eat instead of tossing them into the trash.  My favorite way to make banana bread is with my 1-2-3 method.   I wondered if it would be possible to create a vegan banana bread using the same technique replacing the egg with something that’s vegan friendly, so I began to search the internet for vegan friendly egg substitutes.

Vegan side dishes may sound obvious, but many vegetable side dishes contain butter, milk, or other additions that make them not so friendly for those trying to adhere to a vegan diet.  I searched the Patty Cake’s Pantry website and collected all of my vegan side dishes.  This collection, along with my vegan entrees, and vegan soups helped me to more fully realize that I already had a repertoire of vegan recipes I could draw upon to help get me through my 30 days of vegan.

Asian “Tuna” Salad (Vegan)

Asian “Tuna” Salad doesn’t sound like a vegan recipe, but  it is.  The “fishless” tuna that I used for this recipe was Loma Linda Sesame Ginger Fishless Tuna.  I purchased this product as part of my pre-vegan shopping trip.  I wanted to make sure my pantry contained some simple ingredients that I could use to put together simple meals on nights when life is crazy.  Anyone who regularly visits my site knows that I love to make salads in mason jars for lunch.    Since I’m eating vegan this month, it seemed like a logical choice for an Asian inspired salad.
