Flank steak is the perfect meat for grilling quickly at a high temperature, and it’s made better by marinating it. All you need is to mix up a few common pantry ingredients, pour them over the steak, and allow the steaks to marinate. I usually allow flank steak to sit in the marinade overnight, but it can also be marinated for as little as two to three hours. To have a freezer meal, place the bag with the steak and marinade in the freezer until you’re ready to grill it. Yes, I said that you can put the marinated steak in the freezer to take out when you’re ready to grill. Actually, if you’re going to freeze it, you should take it out the night before you’re going to use it. This allows all of the marinade to fully penetrate the meat as it thaws. However you choose to marinate your steak, this recipe is delicious, and it is always a crowd pleaser. It tastes great when sliced across the grain and served alongside some grilled potatoes or vegetables.
The whole process, from start to finish, is very easy. First mix up your marinade, and pour it over the flank steak. I usually do this in a zip top bag. This is placed in the refrigerator overnight or stored in the freezer until you’re ready to thaw it for grilling. This is particularly convenient when Flank Steak is on sale and you pick up several. You can marinate them ahead of time to have on hand for impromptu summer get-togethers.
Throw the steak on the grill and allow it to cook for about 8 to 10 minutes per side. Once the meat is cooked, remove it from the grill.
Just before serving, carefully slice the steak across the grain. This is delicious when served with grilled potatoes, grilled corn and a side of beans.

- ½ cup vegetable oil
- ¼ cup soy sauce
- ¼ cup red wine vinegar
- 2 teaspoons Worcestershire sauce
- ½ teaspoon ground ginger
- 1 teaspoon minced garlic (about one clove)
- 1½ pound flank steak (You can use up to a 2 or 3 pound flank steak with this recipe if you are feeding a larger crowd.)
- Mix together all marinade ingredients. (Everything above except for the steak).
- Pour into a shallow container large enough to hold the steak or into a zip top bag.
- This can then be refrigerated overnight or placed in the freezer until you're ready to grill it. If you choose to freeze the steak, allow it to thaw overnight in your refrigerator.
- Grill for 8 to 10 minutes per side. A thinner flank steak may require less time.
