Taco Seasoned Oven Fries

Potatoes are another often unappreciated food.    Everyone recognizes mashed potatoes as  an amazing comfort food, but because they are a carbohydrate rich vegetable, people think they are unhealthy. Dieters eschew them.  The poor potato has been the unfortunate  victim of bad press and has gotten a reputation as being bad for you.    This isn’t the case, but don’t take my word for it.  Head over to Prevention to read about potatoes and four other foods that are very nutritious in spite of what you may have been told.

Potatoes are an excellent frugal food.  I can often find a 10 pound bag of potatoes for sale from between .99 and 1.98 by watching the local sale papers.  In addition to being frugal, potatoes are very versatile.    They can be mashed traditionally, or turned into Cauliflower Mashed Potatoes.  They are great in soups, stews, and even baked.  Of course, everyone loves fries.  In my household, we try to limit the amount of deep-fried food we eat, so I don’t make real fries very often.  Instead, I tend to make Oven Fries.

I was recently making some Chorizo Burgers on the grill and wanted to make a quick and easy side to go with them.  The days have been cooler here, so I dared to turn on the oven and bake oven fries.    As I was cutting the potatoes into wedges, I was thinking that perhaps I could change the spices.  That was when I decided to season the potato wedges with something different.

First, I peeled the potatoes and cut them into wedges, about 8 wedges per potato.  The larger potatoes were cut into more wedges.  All of the wedges need to be about the same time so they cook evenly.

potato wedges are mixed with taco seasoning and olive oilI patted the potato wedges dry and drizzled them with 2 tablespoons of olive oil and tossed them until they were all covered.  Then, I was ready to add the secret ingredient.   I added 2 tablespoons of taco seasoning and tossed well to cover all of the potatoes.

arrange seasoned potato wedges in a 9X13 panThe potatoes were then arranged in a 9X13 pan that had been sprayed with non stick spray and were placed in an oven preheated to 400 degrees farenheit.  They were baked for 20 minutesuntil they began get little bubbles on their skin and the edges began to lightly brown.taco seasoned oven fries
