- 1 (15.25 or 16.5 ounce) box lemon cake mix
- 2 eggs
- ⅓ cup safflower oil
- 1 cup dried blueberries
- Preheat oven to 350 degrees.
- Empty cake mix into a large bowl.
- Add eggs and oil to cake mix and stir until well mixed.
- The consistency should be like a thick dough.
- Stir in dried blueberries.
- Drop cookie dough from teaspoons onto cookie sheet 2 inches apart.
- Place cookie sheet in oven and bake for 10 - 14 minutes or until cookies are cooked.
- Allow cookies to cool on cookie sheet for 5 minutes then transfer to a cooling rack.
- Makes 30 cookies.
