I love lemon desserts–lemon pie, lemon cake, lemon curd tarts, lemon bars, and lemon crinkle cookies. I’m sure I’ve forgotten a few, but I’ve remembered the purpose for today’s post. Lemon crinkle cake mix cookies are very simple to make and are sure to become a favorite in your house like they are in mine. To prepare these lemon crinkle cake mix cookies, all you need is a box of lemon cake mix, eggs, and some butter or margarine. If you prefer, you can substitute an equal amount of your favorite, light flavored, oil for the butter. We love making cookies from cake mix because there’s less measuring, and it’s quicker to get them into the oven. This seems to be particularly important when I am baking with my children. They can get to the fun part of cookie making–scooping and rolling faster. They seem to prefer that part to the measuring.
These lemon crinkle cake mix cookies always seem to taste like spring or summer to me, so I sometimes make these in the middle of summer when I usually avoid turning on the stove. My secret to summer cookie baking is simple. I get up very early in the morning, and bake the cookies before the heat of the day. Two sheets of lemon crinkle cake mix cookies are out of the oven in under 30 minutes. The house isn’t overheated, and we get to enjoy something sweet and delicious.
All you need to do is mix up the cookie dough, roll them into balls, roll the balls in powdered sugar, and arrange them on a baking sheet. Pop the sheet into the oven, and voila, lemon crinkle cake mix cookies. It’s so easy it’s almost like having a recipe for “instant” cookies.

- 1 (15.25 ounce) box of Lemon Cake Mix ($0.88--purchased on sale)
- ⅓ cup butter or margarine, softened at room temperature ($0.44)
- 2 eggs ($0.20)
- ½ cup powdered sugar ($0.20)
- Preheat oven to 350 degrees.
- Cream butter and eggs together.
- Stir in cake mix and mix well until a smooth dough is formed.
- Pour powdered sugar into bowl.
- Pinch off small amounts of dough and roll into 1" - 1½" balls.
- Roll each ball of dough in powdered sugar then place 2 inches apart on a cookie sheet.
- Place in preheated oven and bake for 10 - 12 minutes until they are done.
- Allow to cool for 5 minutes on the cookie sheet before transferring to a cooling rack.
- Yield: About 30 cookies.
