I’ve said it before, but I will say it once more.  I love cake mix cookies because they remove any stress related to cookie baking.  There’s really no measuring or searching for lots of ingredients.  A cake mix, oil or butter, and some eggs are all that you need.

Red Velvet Cake Mix Crinkle Cookies, , made from a cake mix, are a simple alternative when you want cookies, but don't want to do a lot of work. Total Cost of Recipe is $1.42 or about 5 cents per cookie.
  • 1 (15.25 ounce) box of Red Velvet Cake Mix ($0.88--purchased on sale)
  • ⅓ mild vegetable oil (corn, safflower, canola, or vegetable) ($0.14)
  • 2 eggs ($0.20)
  • ½ cup powdered sugar ($0.20)
  1. Preheat oven to 350 degrees.
  2. Mix oil and eggs together.
  3. Stir in cake mix and mix well until a smooth dough is formed.
  4. Pour powdered sugar into bowl.
  5. Pinch off small amounts of dough and roll into 1" - 1½" balls.
  6. Roll each ball of dough in powdered sugar then place 2 inches apart on a cookie sheet.
  7. Place in preheated oven and bake for 10 - 12 minutes until cookies are done.
  8. Allow to cool for 5 minutes on the cookie sheet before transferring to a cooling rack.
