I’ve been making this for years as a side dish almost anytime I serve a ham, and I decided to share this recipe now because I always associate apples and Fall, or Autumn if you prefer. I realize that “early apples” are ripe in July , but different varieties continue to ripen well into September. In my mind, apples and the month of September and the beginning of Fall go together. Years ago, I purchased a pre-packaged, boxed dinner from a large grocery chain for Christmas dinner. One of the side dishes included in my box was a pint of scalloped apples. I had never heard of scalloped apples, but it was love at first bite.
The deli where I ordered my dinner sold the apples year-round, and I would buy them at least once a month. My husband and I could devour a quart of them in no time flat. They were good with ice cream, on pancakes or waffles, or even straight from the carton. Often we would warm them in the microwave, top with some granola and a scoop of ice cream and have an almost instant apple crisp.
Basically, we were addicted. Fast forward a few years. We now had two sons, and decided to move from the Los Angeles area to a more sedate community in the Mojave Desert. We moved because we wanted our sons to be able to play outside without fear of them being struck by cars on our busy street. (Realistically, we know that children can get hit by cars in the country as well as the city, but that was one reason.)
On my first trip to the same grocery chain that I had frequented before my move, I realized that they didn’t sell our beloved scalloped apples in my new town. I asked a few questions and learned that they only had them during the Thanksgiving season, and, even during the holiday season, the availability was limited. I was shocked, and disappointed. I knew that I would have to do something I had never done before. I would have to learn to make these apples myself.
Since my only experience with making homemade apple deserts was an apple crisp, I used that as the basis for creating this recipe.

When I began my experiment, I proceeded by peeling and slicing apples and filling my pot with them. Once they were in the pot, I covered them with water and threw in some cinnamon.
I like to give it a stir at this point, and I have to admit that it looks pretty disgusting.
I turned on the stove, brought the apples to a boil, then lowered the heat. I stirred occasionally, and as the apples began to cook, things started to look a little better.
The apples simmered on the stove until they were tender which took about 15 minutes. The smell was right, but there was no thick creamy apple flavored goo holding them together. I considered this for a moment and realized cornstarch would solve the problem. I mixed a little cornstarch into a little water and poured it all around the pot containing the apples. I stirred, and in a few minutes, the sauce had thickened nicely. I served the apples with that nights dinner and they were a huge success though they weren’t quite as sweet as the store-bought version. Still, no one complained.
In my ignorance, I made something healthier than the scalloped apples that I had originally eaten. My apples contained no added sugar. Traditional scalloped apples contained sugar and butter in addition to the ingredients that were in my version. If you prefer your apples to be sweeter, you can add some sugar, maple syrup, or your favorite non caloric sweetener. We prefer them unsweetened because the apple flavor is really the star of this dish, and in our opinion, adding sugar steals some of that flavor.
Simple, healthy, and good to eat, these Stove Top Cinnamon Apples are a keeper, and have been in regular rotation on our dinner table for some time. Stove Top Cinnamon Apples
- 4 cups apples peeled and sliced ($1.09)
- 2 ¼ cups water (divided)
- 1 – 2 tsp cinnamon ($0.20) Depending upon how much cinnamon flavor you like.
- 2 tbsp corn starch ($0.07)
- Place peeled and sliced apples in a saucepan.
- Sprinkle apples with cinnamon.
- Add 2 cups water to pan with apples.
- Bring to a boil.
- Reduce heat, and cover the pan.
- Aimmer apples in water for 10 – 15 minutes until apples are tender.
- In a cup or glass, mix 2 tablespoons of corn starch with ¼ cup water.
- Stir until corn starch is completely dissolved.
- Add cornstarch mixture to apples, and stir until liquid is thickened.
