Cheeseburger Pie

Since making a Southwestern Cheeseburger Pie during my 30 days of beans, I have been thinking about making another plain cheeseburger pie, and I finally  had the chance today. The best thing about this pie is that if you use an oven safe skillet (like a cast iron one), the whole thing can be cooked in one pan.  Of course, I did need a bowl to mix up the batter and a knife and cutting board to cut op the onions.  There was the grater, too.  But the point is that all of the dirty utensils can be washed while the pie is in the oven and you will still have time left to make a salad to go with it.  After dinner, clean up will be a snap.

cheeseburger pie 1.5This recipe began with some difficulty.  I was unable to find the little Bisquick booklet full of impossible pie recipes that has been in our family since the 1970’s, so I turned to the internet where I found this recipe that claimed to be Jimmy Buffet’s Cheeseburger in Paradise.  Because our family loves bolder flavors, I amped up the flavor by increasing the Worcerstershire sauce and adding some extra spices.

The recipe begins with browning ground beef with diced onions in a skillet.  After the meat is cooked and the excess grease drained away, the spices are added and stirred to be fully incorporated into the meat.

Cheeseburger pie 1.1After it is cooked, spread the meat evenly across the bottom of the frying pan before being sprinkled evenly with shredded cheese.

Cheeseburger pie 1.3 Mix up the batter and pour the it over the top of the beef and cheese mixture, then put the whole thing in the oven and allow it to bake for 25 minutes until the top is golden brown and the filling has set up.cheeseburger pie 1.6Allow the pie to sit at room temperature for 5 minutes, then slice it into wedges and serve.   cheeseburger pie 1.8This cheeseburger pie was delicious and everyone was happy with the results.  Food Critic did request additional cheese next time, but he likes extra cheese on everything.

The combination of ground beef, onions, cheese, and seasonings makes a tasty dish that is something between a quiche and casserole. The cheeseburger pie recipe is sure to be a hit with your family.
Ingredients
  • 1 pound lean ground beef (I used 93/7, but 80% works well)
  • 1 medium onion, chopped (about 1½ cups)
  • ½ teaspoon seasoned salt
  • ½ teaspoon granulated garlic
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce (or to taste)
  • 4 ounces Monterrey-Jack cheese, shredded (1 cup)
  • 1 cup milk
  • 2 eggs
  • ½ cup Bisquick
Instructions
  1. Preheat oven to 400 degrees.
  2. Heat hamburger meat and onion in a 9-10 inch cast iron skillet over medium heat until the hamburger is fully cooked and the onion is tender.
  3. Drain excess grease from the pan.
  4. Add seasoned salt, granulated garlic, onion powder, black pepper, and Worcestershire sauce.
  5. Mix well to combine and remove from heat.
  6. Spread hamburger and onion mixture evenly across the bottom of the cast iron skillet.
  7. Sprinkle the top with shredded cheese
  8. In a bowl with 3 cup capacity, or a large measuring cup, mix together milk, eggs, and Bisquick, stirring until well combined.
  9. Once the batter is well mixed, pour it evenly over the hamburger and cheese mixture in the pan.
  10. Place in the preheated 400 degree oven and bake for 25 minutes or until the top is a light golden brown and the center doesn't jiggle when you gently shake the skillet. You can also insert a knife in the center. If it comes out clean, the pie is done.
  11. Remove from oven and allow to sit for 5 minutes before cutting.
