A simple combination of Italian Sausage, vegetables, and rice combined with cream soups make a simple and delicious meal. Cook's Note: If you don't like spicy, you can use sweet Italian Sausage in place of hot to make a milder casserole.
Ingredients
- 1 pound hot Italian sausage
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2-3 celery stalks, chopped
- 4 cloves garlic, chopped
- 3 (10 ounce) cans cream of soups (I used cream of celery, cream of mushroom, and cream of mushroom with roasted garlic.)
- 1 soup can of water
- 1 cup white rice
Instructions
- Preheat oven to 400 degrees
- Brown sausage in a large skillet.
- Drain excess grease from pan.
- Add onion and garlic to pan and saute until onions begin to become translucent.
- Add celery and bell pepper to pan and allow to cook for 1 to 2 minutes longer.
- Add cans of soup, water and rice and mix well to combine.
- Pour into a greased 1½ - 2 quart casserole dish.
- Cover and bake 45 minutes at 400 degrees.
- Uncover and bake for 15 minutes more.
- Serve with a side salad
