Lemon Pepper Chicken and Vegetables Foil Pouch Dinner

Lemon pepper chicken and vegetables cooked in a foil pouch on the grill make a delicious and delightful dinner for a warm summer night.   These pouches are the perfect way to give your family a well balanced meal without heating up the house.Lemon Chicken and Veggies Foil Pack 2Once again, the process of making these foil pouches is  very easy.  All you need to do is arrange halved small red potatoes, coins of corn still on the cob, sliced squash, sliced onion, and some baby carrots onto the foil.  Sprinkle these with 1/8 teaspoon of lemon pepper seasoning, and drizzle with some olive oil.  Lemon Chicken and Veggies 4The vegetables are topped with some 3/4 inch slices of raw chicken breast which is sprinkled with more lemon pepper seasoning.    The foil pouches are sealed and placed on the grill. Foil Pouch on the Grill A few minutes on each side, and you have a delicious dinner sealed in a foil pouch.    Lemon Chicken and Veggies Foil Pack 2You can substitute other vegetables or leave some of these out.  One of my children isn’t a big fan of cooked carrots, so I made one of the pouches without carrots.  Lemon Chicken and Veggies Foil PacketThese foil pouches were a big hit with our family, and we hope you like them, too.

Foil pouches are a perfect solution for dinner on a hot summer day. This pouch, full of chicken and vegetables, is seasoned with lemon pepper to make a perfectly flavored meal.
Ingredients
  • 1 pound chicken breasts, sliced into ¾ inch strips
  • 2 medium crookneck squash, sliced
  • 1 medium onion, sliced
  • 2 ears of corn, sliced into 8 (1/2 to ¾ inch) coins
  • 2 cups baby carrots
  • 16 baby red potatoes, cut into half
  • ¼ cup olive oil
  • 1 teaspoon lemon pepper seasoning
Instructions
  1. Place a sheet of foil onto the counter
  2. Arrange 4 half potatoes onto foil, along with 4 wedges of corn cob, ¼ of the onion, and ½ cup of baby carrots.
  3. Sprinkle vegetables with ⅛ teaspoon lemon pepper seasoning and drizzle with one tablespoon of olive oil.
  4. Arrange ¼ of the chicken on top of the vegetables and sprinkle with ⅛ teaspoon of lemon pepper seasoning.
  5. Seal foil pouch securely for the grill.
  6. Repeat three more times to make a total of 4 pouches.
  7. Arrange pouches over low to medium heat on the grill and cook for 10 minutes on each side.
  8. Allow to rest for 3 to 5 minutes before opening pouches, and open with care because they will be filled with steam. Be careful to avoid being burned.
