Roasted Chicken, Sweet Potatoes, and Cauliflower

I keep thinking that Summer is almost here, but then the weather turns cold again.  The temperatures dropped down low again yesterday, so I decided that it would be a good time to share this recipe for Roasted Sweet Potatoes, Cauliflower, and Chicken.  I really love this recipe because it’s all prepared in a single pan that’s tossed in a hot oven, where it’s basically ignored until serving time.  Simplicity is a word that I would use to describe this recipe for Roasted Sweet Potatoes, Cauliflower, and Chicken, and we all need simplicity when trying to get dinner on the table during those crazy week nights.This recipe began with some purple cauliflower that I saw at a local market.  It was big, beautiful, and it was on sale for only 99 cents for a big head, so I had to buy it.    We also got a few sweet potatoes which were also on sale for 70 cents per pound.    As I was thinking about the cauliflower and sweet potatoes, I realized that they would make a very beautiful combination.  Another cool evening in early Spring made me remember the roasted leg quarters and potatoes that was my first attempt at a roasted one pan meal.  Why couldn’t I do the same thing except use sweet potatoes and cauliflower in place of the russet potatoes and onions?

I decided that it would be a simple substitution, so I proceeded.  I tossed my vegetables with extra virgin olive oil and a homemade seasoned salt blend.    Roasted Chicken, Sweet Potatoes, and CauliflowerI arranged the veggies in a single layer in my baking pan and placed frozen boneless skinless chicken thighs on top.  I sprinkled these with the same seasoning then tossed everything into the oven.Roasted Chicken, Sweet Potatoes, and CauliflowerAn hour later, it was finished.  One pan, no fuss, and an hour to spend with my family doing what needed to be done while dinner took care of itself.Roasted Chicken, Sweet Potatoes, and Cauliflower

A layer of seasoned vegetables is topped with frozen boneless, skinless, chicken breasts and baked in a singled pan. This is a simple and delicious one dish meal. Cook's Note: If you are unable to locate purple cauliflower, or if the price is prohibitive, this can be made with regular white cauliflower. Total Cost of Recipe: $6.20 or $1.03 per serving.
  • 1 head purple cauliflower cut into chunks ($1.00)
  • 3 - 4 medium sized sweet potatoes, peeled and cut into 2 - 3 inch chunks ($2.10)
  • 1½ pound boneless, skinless chicken thighs (about 6 pieces) ($2.51)
  • 2 tablespoons extra virgin olive oil ($0.28)
  • 1 tablespoon seasoned salt ($0.28)
  • ¼ teaspoon black pepper ($0.03)
  1. Preheat oven to 400 degrees
  2. Place cauliflower and sweet potatoes into a 9X13 inch pan that has been sprayed with non stick spray.
  3. Drizzle olive oil over the vegetables.
  4. Sprinkle with 1½ teaspoons of the seasoned salt and all of the black pepper.
  5. Toss vegetables well until they are well coated with oil and the seasonings are evenly distributed.
  6. Arrange the vegetables in a single layer in the bottom of the pan.
  7. Arrange frozen chicken pieces on top of the vegetables.
  8. Sprinkle the tops of the frozen chicken with the remaining seasoned salt.
  9. Place in a 400 degree oven and allow to bake for 45 minutes to 1 hour.
  10. Remove from oven, arrange on plates, and serve.

    1. I love simple recipes, too. The best part of this recipe for me is that you can do it all in one pan. Less mess to clean up after dinner.
