Canned salmon made into patties and fried until crispy. They make for an inexpensive and tasty meal. They can be served on buns as a sandwich or on a plate with your favorite side dishes. Total cost for this recipe is $2.84 or less than $0.48 per patty. Easy to prepare and frugal, too.
Ingredients
  • 1 (14.75 ounce) can salmon ($1.25)
  • 1 small onion, finely chopped ($0.14)
  • 20 saltine crackers, crushed ($0.25)
  • ¼ - ½ teaspoon black pepper ($0.04)
  • 2 eggs ($0.38)
  • Vegetable oil for frying ($0.78)
Instructions
  1. Pour about ½ to 1 inch of oil into the bottom of your skillet.
  2. Drain liquid from canned salmon.
  3. Place drained salmon in a bowl and break into small pieces.
  4. Add crushed saltine crackers and chopped onion to salmon mixture.
  5. Mix well until ingredients are fully incorporated.
  6. Add eggs, one at a time and mix well.
  7. Allow bowl of salmon mixture to rest for about 10 minutes so that the flavors can become more fully incorporated. (This also allows the texture to become better for making patties).
  8. Turn on stove to medium heat to heat the oil in your skillet.
  9. Form 6 burger sized patties from the mixture while the oil heats.
  10. When the oil is hot enough to immediately begin to sizzle when a tiny speck of the patty is dropped in, carefully place the patties into the hot oil ensuring that they are not touching.
  11. Cook for 5 minutes on each side, or until golden brown and crispy.
  12. Be careful when flipping them over to ensure that you don't splash hot oil out of the pan.
  13. Serve as a meat entree with vegetable side dishes, or serve on a bun or dinner role as a burger.

    1. I didn’t even know that my husband liked Salmon Patties until I talked about making them for this challenge. It turns out that he ate them all the time as a kid.
