Chicken Enchilada Soup with Black Beans and Corn

This is a very simple soup recipe to prepare that tastes so good that no one will believe that it's made almost entirely from canned ingredients. Total Cost of Recipe is $8.64 or $1.08 per serving.
Ingredients
  • 2 (14 ounce) cans of chicken broth ($1.38)
  • 1½ cup diced celery (2 stalks) ($0.24)
  • 1 medium sized yellow onion, diced ($0.26)
  • 1 carrot (shredded, or finely diced) ($0.12)
  • 1 (28 ounce) can mild green enchilada sauce ($1.58)
  • 1 (15 ounce) can pumpkin puree ($1.29)
  • 1 (12.5 ounce) can chicken breast ($2.58)
  • 1 (15 ounce) can whole kernel corn, drained ($0.50)
  • 1 (15 ounce) can black beans, drained and rinsed ($0.69)
Instructions
  1. Place all ingredients into a sauce pan.
  2. Mix well.
  3. Bring to a boil.
  4. Reduce heat, and simmer for 15 to 20 minutes until all flavors are well combined.
  5. Serve.
  6. This soup can be served with tortillas, shredded cheese, and sour cream.
