Burrito Pie

This is a simple, and filling, meal that allows you to feed your family of 5 - 6 with only 3 burrito sized tortillas. Cook's Note: This can be made with leftover taco meat and homemade refried beans. You can also add other ingredients to the layers--drained Mexican Corn, Spanish rice, etc. to change the flavor of your Burrito Pie. The total cost of the recipe is $6.26 without additional toppings, or about $1.05 per serving.
  • ½ pound ground beef, cooked and flavored with taco seasoning.($2.45)
  • 1 (16 ounce can) refried beans (you can use flavored canned beans or between 1½ and 2 cups of homemade refried beans if you prefer) ($1.00)
  • 3 (Burrito Sized) flour tortillas($0.75)
  • 1½ cups shredded cheese (I used a combination of Cheddar and Monterey Jack) ($1.26)
  • 1 cup salsa (mild, medium, or hot according to your preference) ($0.80)
  • Shredded Lettuce
  • Diced Tomatoes
  • Sliced Green Onions
  • Black Olives
  • Sour Cream
  • Guacamole
  1. Preheat oven to 350 degrees.
  2. Lay one tortilla flat in the bottom of a greased oven proof pan.
  3. Spread ½ of the can of refried beans over the tortilla, ensuring that it is spread to the edges
  4. Sprinkle with ½ of the taco seasoned ground beef, distributing it evenly.
  5. Top with ½ cup of shredded cheese, evenly distributed.
  6. Repeat layers, ending with the last tortilla.
  7. Spread the salsa over the top of the tortilla.
  8. Sprinkle with cheese.
  9. Place in 350 degree oven and bake for 20 to 25 minutes.
  10. Burrito Pie is ready when the cheese is melted and the pie is heated through.
