This meatloaf gets it's flavor from a box of cornbread stuffing. It's simple to prepare, and loaded with flavor. I bake mine in a loaf pan, but you can bake yours in a 9/x13 inch pan, or even a bundt. The baking time won't change much, but you can have fun with it. Total cost of recipe = $9.24 or $1.16 per serving
  • 1 (6 oz) box corn bread stuffing mix ($0.88)
  • 1 cup water
  • 2 pounds lean (80/20) ground beef ($6.75)
  • 2 eggs ($0.24)
  • 2 tablespoons dried minced onions ($0.47)
  • ¼ cup of ketchup (divided) ($0.65)
  • ¼ cup of barbecue sauce (divided) ($0.25)
  1. Preheat oven to 350 degrees.
  2. Place corn bread stuffing mix into a bowl large enough to accommodate all of the ingredients.
  3. Pour the water over the stuffing mix and mix well to moisten the stuffing mix.
  4. Add ground beef, eggs, and dried minced onions to bowl with stuffing mix.
  5. Add 2 tablespoons of ketchup and 2 tablespoons of barbecue sauce to bowl with the other ingredients.
  6. Mix ingredients well, incorporating all of them together.
  7. Form meat mixture into a loaf shape and place it into a loaf pan that has been sprayed with non stick spray.
  8. Bake for 1 hour or until internal temperature reaches 160 degrees.
  9. Mix together the remaining 2 tablespoons of ketchup and 2 tablespoons of barbecue sauce.
  10. Spread the ketchup and barbecue sauce evenly over the top of the meatloaf.
