Vegan Sloppy Joes

This is a very flavorful recipe for homemade Sloppy Joes that just happen to be vegan. Cook's Note: You can substitute 2 cups of cooked lentils for the frozen "beef" crumbles in this recipe. If you use lentils, I don't recommend pureeing the vegetable mixture. The veggies add extra texture. Just add the cooked lentils at the point where the beef crumbles would have been added. The total cost of this recipe is $6.76 or about 85 cents per serving.
  • 2 tablespoons olive oil ($0.28)
  • 1 medium onion, chopped ($0.14)
  • 2 cloves garlic, chopped ($0.16)
  • 1 bell pepper, chopped (I used a red one) ($0.48)
  • ¼ cup vegan Worcestershire sauce ($1.11)
  • 8 ounces tomato sauce ($0.34)
  • 3 tablespoons packed brown sugar ($0.12)
  • 2 tablespoons cider vinegar ($0.12)
  • ½ cup ketchup ($0.44)
  • ½ teaspoon garlic powder (optional) ($0.02)
  • 1 (12 ounce) package of frozen vegan "meat" crumbles ($3.59)
  • 8 hamburger buns ($0.96)
  1. Heat oil in a large, deep skillet.
  2. Add onions, garlic, and bell pepper to the skillet and saute over medium heat and cook until vegetables are soft.
  3. Add Worcestershire sauce, tomato sauce, brown sugar, vinegar, ketchup, and garlic powder (if you are using it).
  4. OPTIONAL STEP: If your children don't like the veggies in their sloppy joes, carefully blend the vegetables using an immersion blender at this point.
  5. Add frozen "beef" crumbles to the skillet, mix well, and bring to a boil.
  6. Allow to simmer for 5 minutes
  7. Serve on buns.
