Simple Seafood Salad

This recipe is easy to prepare, and tastes just like the expensive seafood salad that 's sold in the deli section of your local grocery store. The total cost of the recipe is $6.92 or about $1.16 for a ¾ cup serving.
  • 1 cup shredded surimi (imitation crab) ($1.50)
  • 1 cup small bay, or salad, shrimp (300-500/pound) ($3.89)
  • 1 stalk of celery ($0.10)
  • 3 green onions ($0.17)
  • ⅓ cup of cheddar cheese (mild, medium, or sharp) cut into small pieces ($0.64)
  • 4 black olives, sliced ($0.08)
  • ½ teaspoon of Old Bay Seasoning (or to taste) ($0.05)
  • ½ cup mayonnaise ($0.49)
  1. Separate chunks of surimi into small bite sized pieces. I do this with well washed hands.
  2. Place prepared surimi into a medium sized bowl.
  3. Add shrimp to bowl. If you are using frozen shrimp, place them in a plastic bag and allow them to thaw by immersing the bag in cold water while you prepare the rest of the ingredients.
  4. Finely dice the celery, green onion, and the cheese.
  5. Add celery, green onions, and cheese to bowl with surimi.
  6. Thinly slice the olives and add to the bowl with the rest of the ingredients.
  7. Sprinkle the top with Old Bay seasoning.
  8. Add thawed shrimp to the bowl if you didn't already.
  9. Add mayonnaise.
  10. Mix well to combine, making sure that all ingredients are evenly distributed
  11. Serve atop a bed of greens for a salad; use as a filling for sandwiches, or with buttery flavored crackers.
