Candied Butternut Squash

A simple and delicious side dish that goes great with grilled or roasted meats.
  • 1 small butternut squash (peeled, seeded, and cut into 1 inch cubes--approximately 4 cups)
  • 2 tablespoons butter
  • ¼ cup packed brown sugar
  • ½ teaspoon kosher or coarse sea salt
  • ¼ teaspoon black pepper
  • 2-4 tablespoons water (as needed)
  1. Prepare squash by peeling it and cutting it into 1 inch cubes. You will have approximately 4 cups of squash.
  2. Melt butter in large skillet with lid
  3. Add butter and stir until sugar is dissolved.
  4. Add squash to pan and saute, stirring frequently, until squash is well coated and tender. About 30 minutes.
  5. Add water, one tablespoon at a time, to prevent pan from drying out and squash from burning or sticking.
  6. The squash is done when it can easily be pierced with a fork.
