Mummy Meatloaf for Dinner

This basic meatloaf recipe is elevated to a new purpose by shaping the meat mixture into an oval shape, adding eyes and teeth made from onions, and wrapping it with bacon. This creates the perfect Mummy Meatloaf for a delicious Halloween dinner. Cook's note: The ketchup is optional. Barbecue sauce can be used in place of the ketchup, and plain tomato sauce can be used, too. If you omit the tomato sauce, you will need to use the larger amount of water. Totals cost of recipe is $8.95 or $1.12 per serving.
  • 2 pounds of lean ground beef (You can use ground turkey or pork or a combination of meats) ($6.58 for two pounds of ground beef).
  • 1 package of onion soup mix ($.0.54)
  • 1 cup of rolled oats ($0.12)
  • 2 eggs ($0.24)
  • ½ cup water (If you omit the ketchup, use ¾ cup water)
  • ⅓ cup ketchup (optional) ($0.45)
  • ¼ medium sized onion ($0.06)
  • 3 - 4 strips of bacon ($0.96)
  1. Preheat oven to 350 degrees
  2. Combine ground meat, onion soup mix, oats, eggs, water, and ketchup in a mixing bowl and combine well. I use my clean hands for this step.
  3. Once the meat mixture is thoroughly combined,form it into a roughly head shaped oval in a baking pan.
  4. Remove two or four outer layers of the Onion and place them on the meatloaf where eyes would be. I doubled up the layers and used two layers of onion for each eye, but you can use only one, if you prefer.
  5. Cut the remaining, unused onion into strips and arrange on the meatloaf where the mouth would be. These make the teeth.
  6. Wrap bacon around the meatloaf, tucking ends under the edges to make the mummy wrappings.
  7. Place bacon wrapped mummy head in the oven and bake at 350 degrees for 1 hour.
  8. Remove from oven and allow to stand for 10 minutes before serving.
