Cucumber Jicama Salad in a Jar

Jicama, a waxy tuber, is paired with cucumber, chili seasoning, and lime juice to make a healthy and refreshing salad. If you are packing this in a jar, add lime juice at serving time.
Ingredients
  • 2 cups of jicama cut into bite sized pieces
  • 2 cups of cucumber cut into bite sized pieces
  • Chile Seasoning (such as Tajin, Cielito, Chile con Limon) to taste
  • 1 lime, quartered
Instructions
  1. FOR ASSEMBLY IN A JAR:
  2. Layer ⅔ cup of jicama in the bottom of a 1 quart mason jar and sprinkle with chile seasoning
  3. Arrange 1 cup of cucumber on top of the jicama
  4. Top cucumber with ⅔ cup of jicama and sprinkle with chile seasoning again.
  5. Add another layer of 1 cup cucumber on top of this layer of jicama.
  6. Top with the remaining jicama and more chile seasoning.
  7. Place lid on jar and store in refrigerator until serving time.
  8. When ready to serve, shake jar vigorously to toss the salad.
  9. Serve with lime wedges and additional chile seasoning.
  10. Makes 4 (1 cup) or 8 (1/2 cup servings)
  11. TO SERVE IN A BOWL
  12. Put cucumber and jicama into a shallow bowl and toss well.
  13. Sprinkle chile seasoning on top
  14. Serve with lime wedges and additional chile seasoning.
