Chocolate Bean Muffins

White beans, oats, and pumpkin puree form the base for this moist and delicious chocolate muffin recipe.
  • 2 (15 ounce) cans of white beans
  • 1 cup rolled oats
  • ½ cup pumpkin puree
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon pumpkin pie spice
  • 1 tsp vanilla
  • 1 cup packed brown sugar
  • 1 cup cocoa powder
  1. Drain and rinse cans of beans to remove excess salt
  2. Return beans to the cans and add water to fill cans
  3. Put beans and all other ingredients into a blender or food processor and mix/blend until smooth.
  4. Place into a greased muffin tin or use cupcake wrappers. I confess that I do both.
  5. Bake at 350 degrees for 20 to 30 minutes or until fully cooked.
