Lima Bean Rice O'Brien

Leftover bean cooking liquid, or bean broth, can be used in a variety of ways. In this recipe, it takes the place of water that is generally used to cook beans.
  • 1 cup rice
  • 2 cups Lima bean broth (the liquid left over from cooking Lima beans)
  • ½ teaspoon salt
  • ½ stick butter
  • ½ cup bell pepper, chopped
  • ½ cup green onion, thinly sliced
  • ¼ cup chopped black olives
  1. Add water to bean broth so that the liquid measures 2 cups.
  2. Cook Rice according to package directions substituting bean broth for water.
  3. Once rice is done, melt butter in a skillet
  4. Saute bell pepper for a few minutes until it becomes tender.
  5. Add green onions to the pan and saute
  6. Add rice to vegetables in the pan and fry the rice in the butter and vegetable mixture stirring frequently.
  7. Once rice is well coated, and the vegetables well incorporated, mix in the olives and stir until they are evenly distributed in the rice.
  8. Serve as a side dish with your favorite meat entree.
