Pressure Cooker Pinto Beans and Ham

Beans and ham are a classic combination. Cooking dried beans with a ham bone allows the flavor of the ham to fully penetrate the beans giving them excellent flavor. Cook's Note: You can double the amount of beans without doubling the other ingredients when cooking them in the pressure cooker. I am using a 6 quart electric pressure cooker.
Ingredients
  • 1 pound of pinto beans.
  • 1 meaty ham bone
  • ½ large onion or 1 medium onion, cut into chunks
  • I clove garlic crushed
  • 1 teaspoon salt
  • water to cover beans
Instructions
  1. Sort through dried beans and remove any bad beans or other debris
  2. De-gas beans as follows: Place beans in a pot and cover with water. Bring to a boil. Cover and let set for 1 hour. At the end of the hour, drain beans and proceed with your recipe.
  3. Place ham bone, beans, onion, and garlic into pot of electric pressure cooker.
  4. Add water to cover beans by about 2-3 inches.
  5. Add salt to water.
  6. Close lid on pressure cooker and seal pressure valve
  7. Set timer for 20 minutes
  8. Allow pressure cooker to sit for one hour after cooking.
  9. Release any remaining pressure and carefully remove the lid.
  10. Remove ham bone from pressure cooker and chop meat.
  11. Return chopped meat to beans and stir.
  12. Ladle into bowls and serve with corn bread and a salad for a complete meal.
