Creme Fraiche

This is a simple cultured cream that is great for adding richness to a variety of both savory and sweet dishes. I can't find creme fraiche in stores in my area, but I can make it.
Ingredients
  • 1 cup cream (whipping cream from the dairy case)
  • 2 tablespoons of buttermilk
Instructions
  1. Pour cream into a non reactive container. I use a mason jar
  2. Add the butter milk and mix well.
  3. Allow to stand on the counter, at room temperature (approximately 70 degrees) for 8 to 24 hours or until it thickens.
  4. Cook's Note: If your kitchen is cooler, it will take longer for the creme fraiche to set up.
  5. Store Creme Fraiche in the refrigerator for 10 - 14 days.
