Pecan Pinto Pie

This pie made from pinto beans is surprisingly sweet and delicious. It's reminiscent of a pecan pie, but has a flavor all of its own. This recipe makes 1 pie which yields 8 servings.
  • ¾ cup pinto beans, drained and rinsed
  • ¾ cup white sugar
  • ¾ cup firmly packed brown sugar
  • 3 eggs
  • ½ cup butter, melted
  • 1 tsp vanilla
  • ¾ cup pecan pieces
  • 1 (9") pie crust for a deep dish pie
  1. Preheat oven to 350 degrees
  2. Mash or puree beans (This is your preference. I pureed mine with an immersion blender and used the same blender to mix together all of the other ingredients except for the pecans.)
  3. Add sugar and melted butter to bean mixture and mix well to combine.
  4. Add eggs, one at a time, and mix well after each addition.
  5. Stir in vanilla.
  6. Stir in the pecans with a spoon.
  7. Pour into pie crust
  8. Bake in 350 degree oven for 50 - 60 minutes
