Ice Potato Pie

Russet potatoes take the place of sweet potatoes in this simple and delicious pie. This recipe makes one pie which yields 8 servings.
Ingredients
  • 1 deep dish 9" pie crust
  • 1½ cups mashed russet potatoes
  • ¾ cup evaporated milk
  • ¼ cup melted butter
  • 2 cups sugar
  • 1 tablespoon corn starch
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon allspice
Instructions
  1. Preheat oven to 350 degrees
  2. Thoroughly mix together corn starch and sugar in a mixing bowl.
  3. Add mashed potatoes, evaporated milk, and butter to mixing bowl with sugar.
  4. Mix well until creamy.
  5. Add eggs, one at a time, mixing until well incorporated.
  6. Add vanilla, salt, and spices and mix well to evenly distribute them throughout the custard.
  7. Pour into prepared pie shell
  8. Bake in a 350 degree oven for 50 - 65 minutes or until the center is set.
  9. Allow to cool for 30 - 45 minutes before cutting to ensure that the filling is firm.
