Mozzarella Pesto Salad

This salad is a simple combination of 5 ingredients and requires no cutting or chopping. It's a perfect salad to throw together for an impromptu get together with friends.
  • 8 ounce package of little mozzarella balls
  • 1 pint of grape tomatoes
  • ¾ cup pitted kalamata olives
  • 2 tablespoons pesto
  • ¼ cup olive oil
  1. Drain mozzarella and place in a bowl.
  2. Wash and dry the grape tomatoes and place in the bowl with the mozzarella balls.
  3. If the olives are packed in brine, drain them. If they are packed in olive oil with herbs, skip this step.
  4. Add the olives to the tomato and mozzarella balls in the bowl.
  5. In a cup, mix together the pesto and the olive oil.
  6. Pour olive oil mixture over tomatoes, mozzarella, and olives
  7. Toss well to combine.
  8. Allow to sit in the refrigerator for at least an hour for the flavors to mix together. I prefer to allow it to sit overnight for maximum flavor.
