This coleslaw is made better by the addition of bacon, sunflower kernels, and tomatoes.
  • 1 cup Mayonnaise
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon celery seed
  • 2 teaspoons sugar
  • 5 cups shredded cabbage mixed with 1 cup shredded carrots (You can substitute a bag of coleslaw mix.)
  • ¼ cup precooked chopped bacon (I used the bacon from a bag that was pre-cooked and pre-chopped. Just make sure that it's REAL bacon.)
  • ½ cup sunflower kernels
  • ⅔ cup cherry tomatoes, quartered
  • 3 green onions, thinly sliced.
  1. Put mayonnaise, vinegar, celery seed and sugar into a bowl and mix to combine and make the dressing.
  2. Put cabbage and carrots (or coleslaw mix) into a bowl with sunflower kernels, and bacon.
  3. Pour dressing over salad and mix until well combined.
  4. Gently fold in tomatoes.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to combine.
