Tomato Rice

This post is inspired by a recipe from the Strictly Dumpling YouTube Channel. It is a very simple and frugal recipe that produces a delicious rice side dish. It requires a minimum of preparation, and it tastes delicious. Total cost of this recipe is $1.85 or $0.24 per serving.
  • 1 large ripe tomato or two ripe Roma tomatoes ($0.99)
  • 2 cups of rice ($0.67)
  • 1 Tbl of olive oil ($0.14)
  • 1 tsp salt ($0.02)
  • ½ tsp pepper. ($0.03)
  • 2½ cups water
  1. Rinse rice and place into sauce pan.
  2. Add water to pan
  3. Pour in olive oil, salt, and pepper.
  4. Nestle your tomato, or tomatoes, into the center of the pot into the rice.
  5. Place lid on the pan and turn the stove on to medium and bring pan to a boil.
  6. Once boiling, reduce heat to low and simmer for 15 minutes or until most of the water has been absorbed. .
  7. Turn off heat and allow the pot to sit on the stove with the lid in place for 5 more minutes.
  8. Remove lid and stir the tomatoes into the rice, distributing evenly.
  9. Serve alone or as a side with your favorite entree.
