Healthy Popsicles

This recipe is very simple to make. The types of fruit can be switched to create a different flavor sweet treat. These are a great way to upgrade your frozen treats. If you don't have a popsicle mold, use paper cups and cover them with plastic wrap before inserting pieces of a cut straw or wooden sticks.
  • 2 cups fresh strawberries leaves removed and sliced or chopped
  • ½ to 1 cup whole blueberries
  • 1-2 tablespoons fresh Lemon juice
  • 1 tablespoon sugar or honey (optional and to taste)
  • 1 - 1½ cup Coconut water--either get the water from a thai coconut or buy a good quality one that is already out of the coconut.
  1. Mix together blueberries and strawberries.
  2. Sprinkle with lemon juice.
  3. Add sugar or honey if you are using it.
  4. Stir together until lemon and optional sweetener are thoroughly mixed with the berries.
  5. Fill popsicle molds with berry mixture.
  6. Pour in coconut water to fill in the spaces
  7. Place sticks into mold
  8. Pick the mold up about two inches above the table and drop it back onto the table surface, making certain that it remains upright. This removes any air pockets that might be in the popsicle. (See our first photo for what can happen if you don't do this step.)
  9. Place in freezer for 2 - 3 hours or until frozen solid
  10. To remove from mold, dip the base of the mold into warm water for a few seconds 10 - 30 until the popsicle releases itself. Alternately, you can wrap your warm hand around the popsicle mold and hold it for several seconds then pull up on the stick. The popsicle should slide out easily.
