Camarones al Mojo de Ajo

Shrimp cooked in a garlic butter sauce with fresh cilantro is a simple and delicious dinner entree that your family is sure to love. Chef's Note: If you don't have access to fresh cilantro, add 1 tablespoon of dried cilantro just before you add the shrimp. Proceed with the rest of the recipe.
Ingredients
  • 1 pound of raw medium to large shrimp (20 - 25 shrimp per pound), peeled and deveined
  • 2 tablespoons olive oil
  • ¼ cup butter
  • 4 cloves garlic, minced
  • ⅛ teaspoon salt (or to taste)
  • ¼ cup fresh cilantro leaves, chopped
Instructions
  1. Heat olive oil int he bottom of a deep skillet over medium heat
  2. Add butter and garlic to skillet.
  3. Stir until butter is melted and garlic is beginning to become translucent.
  4. Add Shrimp to pan.
  5. Stir continuously until shrimp are pink and opaque.
  6. Sprinkle with cilantro and toss well.
  7. Serve with tortillas or bread for dipping in the butter.
