Simple Sauteed Spinach

Raw spinach is one of those things that shrinks to nothing when you cook it. It/s almost better to begin with the frozen stuff, but when you have an abundance of fresh spinach, this is a great way to prepare it. Ingredients
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 12 ounces package of fresh baby spinach (7½ to 8 cups fresh spinach)
  • ⅛ teaspoon kosher salt
  • ½ to 1 teaspoon fresh lemon or lime juice
Instructions
  1. Heat oil in skillet.
  2. Add garlic to hot oil.
  3. Saute for 1-2 minutes until garlic begins to soften but don't let it burn or it will be bitter.
  4. Add spinach to pan and stir constantly until the spinach is wilted.
  5. Sprinkle with salt and mix well.
  6. Stir in lemon or lime juice just before serving.
