Bacon Wrapped Green Beans

Wrapping bacon around blanched green beans elevates the lowly green bean to a higher status. It's delicious, too.   The instructions below are for frying the bundles in a skillet, but this works great on a grill, too.  Simply cook the bundles of green beans over indirect heat until the bacon is crispy. If you have trouble keeping the bacon and green beans together, a toothpick can be used to secure it.  Just remove the toothpick before serving.
  • 1 pound green beans, washed and strings removed if necessary
  • 6 - 10 strips of thin sliced bacon
  1. Blanch green beans in boiling water for 2 - 4 minutes until crisp tender.
  2. Immerse the beans in cold water to stop the cooking process
  3. Dry the beans with a paper towel or allow to drain completely in a colander.
  4. Cut bacon strips in half.
  5. Divide beans into 12 equal piles. (I usually use about 6 beans per bundle.)
  6. Wrap each pile with ½ or 1 whole strip of bacon depending upon the size of the green bean bundle.
  7. Place bundles into a hot skillet with seam side down and allow to cook for 3 - 5 minutes or until the bacon is cooked on that side.
  8. Turn the bundles, using tongs, ensuring that all sides are cooked.
  9. Place bundles on paper towels or a rack to allow the grease to drain away.
  10. Serve as a side dish with your favorite meal.
