Lemon Gelatin Fruit Salad

This is a light, fluffy, and refreshing dessert or accompaniment to a brunch. Though the prep time is listed as 2 hours and 10 minutes, 2 hours are for the time it must chill in the refrigerator in order to set up. This recipe stays soft and spoonable, though. It never truly firms up like a traditional gelatin dish. Chef's Note: If dieters or diabetics are coming to dinner, this can be made with sugar free gelatin, fat free cottage cheese, and light whipped topping. Marshmallows can also be omitted to further reduce the sugar content.
  • 1 (20 ounce) can of pineapple tidbits packed in it's own juice, drained
  • 1 (11 ounce) can mandarin oranges in light syrup, drained
  • 1 (16 ounce) container of cottage cheese
  • 2 (4 serving size) packages of lemon gelatin
  • 2 cups miniature marshmallows
  • 1 (8 ounce) container of frozen whipped topping
  1. Place drained fruit and cottage cheese in a large bowl.
  2. Sprinkle lemon gelatin powder over top the top.
  3. Mix well until gelatin is thoroughly mixed into the fruit and cottage cheese mixture.
  4. Stir in marshmallows.
  5. Fold in frozen whipped topping.
  6. When mixture is thoroughly mixed, chill in refrigerator for two hours before serving.
  7. We think this goes great with Maria cookies.
