These cookies are based upon a favorite childhood cake that both of our families served--the lemon blueberry bundt cake. We love the tangy citrus paired with the sweet berries.
Ingredients
1 (15.25 or 16.5 ounce) box lemon cake mix
2 eggs
⅓ cup safflower oil
1 cup dried blueberries
Instructions
Preheat oven to 350 degrees.
Empty cake mix into a large bowl.
Add eggs and oil to cake mix and stir until well mixed.
The consistency should be like a thick dough.
Stir in dried blueberries.
Drop cookie dough from teaspoons onto cookie sheet 2 inches apart.
Place cookie sheet in oven and bake for 10 - 14 minutes or until cookies are cooked.
Allow cookies to cool on cookie sheet for 5 minutes then transfer to a cooling rack.
Makes 30 cookies.
