Oatmeal Raisin Spice Cake Mix Cookies

These simple cookies start with a spice cake mix. They are simple to make and very tasty. If you need to make cookies in a hurry, these are the ones you should make.
  • 1 (15.25 to 16.5 ounce) box spice cake mix
  • ½ cup quick oats
  • ½ cup raisins
  • 2 eggs
  • ⅓ cup vegetable oil
  1. Preheat oven to 350 degrees
  2. Pour dry cake mix into a bowl
  3. Add oats and raisins to the bowl and mix with dry cake mix to evenly distribute them through the mix.
  4. Add eggs and oil to the cake mix, oat, and raisin mixture.
  5. Stir vigorously until all of the ingredients are well incorporated.
  6. Roll dough into 36 walnut size balls and place them 2" apart on cookie sheets
  7. If you want a flatter cookie than appears in the photo above, gently press the cookies with either a fork or the bottom of a glass. This step isn't necessary unless you dislike thicker and rounder cookies.
  8. Bake in 350 degree oven for 10 - 12 minutes.
  9. Allow to cool on cookie sheet for 5 minutes before transferring to a cooling rack.
