Peppermint Mocha Cake Mix Cookies

This simple, yet delicious chocolate cookie is loaded with the flavor of peppermint and just a hint of coffee. Cook's Note: If you don't drink or use coffee, it can be omitted from the recipe.
  • 1 (15.25 to 16.5 ounce) box of devils food cake mix
  • 2 eggs
  • ⅓ cup safflower oil
  • ½ -1 teaspoon instant coffee powder or to taste (optional)
  • ½ cup crushed peppermint candies
  1. Preheat oven to 350 degrees.
  2. Pour crushed peppermint candies onto a shallow bowl or plate and set aside.
  3. Pour cake mix into a bowl.
  4. Add eggs, oil, and instant coffee powder.
  5. Mix well until dough is formed.
  6. Roll dough into 36 walnut sized balls.
  7. Dip the top of each ball into the crushed peppermints.
  8. Place each ball, peppermint side up onto a baking sheet sprayed with non-stick spray.
  9. Bake for 10 - 12 minutes in a 350 degree oven.
  10. Remove from oven and allow to cool for 5 minutes on the cookie sheet before removing them to a cooling rack.
