Sausage and Rice Casserole

A simple combination of Italian Sausage, vegetables, and rice combined with cream soups make a simple and delicious meal. Cook's Note: If you don't like spicy, you can use sweet Italian Sausage in place of hot to make a milder casserole.
  • 1 pound hot Italian sausage
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2-3 celery stalks, chopped
  • 4 cloves garlic, chopped
  • 3 (10 ounce) cans cream of soups (I used cream of celery, cream of mushroom, and cream of mushroom with roasted garlic.)
  • 1 soup can of water
  • 1 cup white rice
  1. Preheat oven to 400 degrees
  2. Brown sausage in a large skillet.
  3. Drain excess grease from pan.
  4. Add onion and garlic to pan and saute until onions begin to become translucent.
  5. Add celery and bell pepper to pan and allow to cook for 1 to 2 minutes longer.
  6. Add cans of soup, water and rice and mix well to combine.
  7. Pour into a greased 1½ - 2 quart casserole dish.
  8. Cover and bake 45 minutes at 400 degrees.
  9. Uncover and bake for 15 minutes more.
  10. Serve with a side salad
