Roasted Onion Potatoes

Three simple ingredients and a hot oven are all that you need to create this delicious and satisfying potato side dish which goes great with a variety of meat entrees. They're also good on their own.
  • 5 russet potatoes
  • 1 (1.2 ounce) envelope of onion soup mix
  • ¼ cup extra virgin olive oil
  1. Preheat oven to 400 degrees.
  2. Wash and peel potatoes. (Peeling potatoes is optional)
  3. Cut potatoes into chunks that are approximately 1 - 1½ inches in diameter.
  4. Pat Potatoes dry with paper towel and place in a mixing bowl.
  5. Pour olive oil over potatoes and toss to coat.
  6. Sprinkle potatoes with soup mix and toss until potatoes are thoroughly coated with onion soup mix.
  7. Place potatoes, in a single layer, into a 13X9 inch baking pan that has been sprayed with non-stick spray.
  8. Place in oven and bake at 400 degrees for 25 - 35 minutes or until the potatoes are tender and beginning to brown.
  9. Serve
