Linguine Carbonara

Loaded with the flavor of garlic, bacon, parsley, and Parmesan cheese, this is a simple and delicious dinner. Cook's Note: If you want to make this simpler, use precooked bacon pieces. If you don't have fresh parsley, you can substitute dried, but instead of adding it at the end, it should be mixed into the milk, egg, and water mixture. The total cost of this recipe is $6.11 or about $1.02 per serving.
  • 1 pound linguine ($1.00)
  • 2 tablespoons olive oil ($0.28)
  • 4 cloves garlic, minced ($0.08)
  • 1 cup frozen peas, thawed under warm water. ($0.40)
  • ½ teaspoon crushed red pepper ($0.05)
  • ¾ pound bacon, cooked, and then chopped (This makes approximately 1 cup) ($3.00)
  • 2 eggs ($0.34)
  • 1 tablespoon milk ($0.02)
  • 3 tablespoons pasta cooking water.
  • ½ cup grated Parmesan cheese ($0.75)
  • 2 Tablespoons chopped Italian (flat leaf) Parsley (Can substitute 2 teaspoons dried parsley) ($0.15)
  • Pepper, to taste ($0.04)
  1. Fill a large 5-6 quart pot with water and add 1 tablespoon salt.
  2. When the water is boiling, cook pasta according to package directions.
  3. While you wait for the water to boil, cook bacon in a large, deep frying pan until crispy.
  4. Remove bacon from pan and allow to drain on paper towels.
  5. Drain bacon grease from pan and wipe clean with paper towel.
  6. Chop, or crumble, bacon into small pieces and set aside.
  7. Chop garlic and add to pan with olive oil.
  8. Add peas to pan with garlic and saute over low heat for 2-3 minutes.
  9. Add red pepper to pan and continue to saute until peas are heated through.
  10. Add cooked pasta to pan and stir to combine.
  11. Mix together eggs, milk, and pasta cooking water. (If you are using dried parsley, add it at this point). Make sure you are stirring vigorously as you add hot pasta water to the eggs or they will curdle as they begin to cook.
  12. Add chopped bacon and egg mixture to the pasta and toss well until all of the noodles are coated with the egg mixture.
  13. Remove pasta from heat and add (Fresh) parsley and Parmesan cheese.
  14. Toss well and serve.
