Cannellini Beans and Tomatoes

Serve the bean/tomato mixture over whole grain pasta, or brown rice for a vegetarian meal. The beans and tomatoes also make a great accompaniment for grilled chicken or fish. Depending on the appetites of your diners, and what else is being served, this recipe may be able to serve 4. Total Cost of Recipe: $1.74 or $0.87 per serving. Adding Cooked Pasta will add a cost of approximately $0.20 per serving.
  • 2 tablespoons olive oil ($0.28)
  • 2 cloves garlic, chopped ($0.04)
  • 1 (15oz) can of Cannellini or Great Northern Beans, rinsed and drained ($0.69)
  • 1 (14.5oz) can of diced tomatoes (you can use Italian style tomatoes if you like.) ($0.59)
  • 1 tablespoon of Italian Seasoning ($0.12)
  • salt, to taste
  • ¼ teaspoon pepper ($0.02)
  • Cooked Pasta or Rice for serving (optional)
  1. If you are planning on serving these beans over rice or pasta, you will need to begin cooking rice or pasta before beginning sauce. You want everything to be done at the same time.
  2. Heat olive oil in sauce pan over medium heat
  3. Add Garlic and saute for 1-2 minutes until garlic begins to soften. Do no allow it to burn.
  4. When the garlic is ready, add the canned tomatoes and the spices.
  5. Mix well to combine.
  6. Bring to a boil then reduce heat to low and simmer, stirring occasionally for 15 minutes.
  7. Add beans and cook for another 5 minutes or until beans are heated through.
  8. Add salt and pepper to taste.
