Southwest Style Hominy Casserole

This simple one pan recipe is loaded with flavors of the southwest and pairs well with grilled meat. Cook's Note: If you want to save a few calories, this recipe can be made with light or fat free sour cream and reduced fat cheese. Non-fat cheese does not work well with this recipe because it doesn't melt. Total Cost of Recipe: $4.99 or $0.63 per serving.
  • 1 (29 ounce) can hominy ($1.69)
  • 1 (4 ounce) can diced green chilies ($0.59)
  • 1 cup sour cream ($0.74)
  • 2 cups shredded Colby Jack cheese ($1.97)
  1. Preheat oven to 350 degrees
  2. Spray a 2 quart casserole with non stick spray
  3. Rinse and drain hominy and add to the prepared casserole.
  4. Add chopped green chiles, sour cream and 1½ cups shredded cheese to casserole dish.
  5. Mix until well combined.
  6. Smooth top and sprinkle with the remaining ½ cup shredded cheese.
  7. Bake at 350 degrees for 30- 45 minutes or until casserole is bubbly and cheese has melted.
